Ingredients (for 12 muffins)

Dough

200 g BE CLIMATE blueberries**
250 g flour
1 pck. baking powder
120 g sugar
1 pck. vanilla sugar
240 ml oat milk
70 ml cooking oil

Glaze

180 ml oat milk
1 pck. vanilla pudding powder
200 ml soy cooking creamΒ 
50 g sugar
150 g vegan butter

Preparation:

  1. Put all the ingredients for the dough in a bowl and mix it well.
  2. Fill the dough into small muffin tins and put them in the oven for about 30 minutes (160 degrees convection).
  3. In the meantime, you can prepare the vegan glaze. Bring the oat milk and cooking cream to boil in a pot and stir in the sugar.
  4. Remove the pot from the heat and stir in the vanilla pudding.
  5. Then melt the butter in the pot and mix everything together. Place the glaze in the refrigerator for about 10 to 20 minutes.
  6. When the muffins are ready, you can decorate them with the glaze, sprinkles, etc. as you like.
