Banana Ketchup

1. Chop your onion into small pieces and cut your banana into rough pieces. Then cut the chili into small pieces and remove the seeds beforehand. Finely chop the ginger and garlic.

2. Put oil in a medium sized pan or pot and lightly fry your onions there. Once they have softened nicely (about 3-5 minutes) add the banana pieces and let them simmer for another 5 minutes. You can mash them a bit while stirring.

3. Add the ginger, garlic, curry powder and chili. Mix everything well and let it simmer for 1-2 minutes.

4. At the end, add the white wine vinegar and season everything again with salt and pepper.

5. Let it simmer for a while before cooling down.

6. Now you can either chop the ketchup lightly with a fork or mix it until it becomes really liquid. If you want it even more liquid, you can just add a little bit more water.
