In the cold season, nice warming comfort food is often what’s needed. And what could be better for that than this typical Dutch endive mash?

Preparation:

1. Peel the potatoes and cut them into equal pieces.

2. Boil them in salted water for 20 minutes until they are soft. Drain them and save one cup of the cooking water.

3. In the meanwhile, heat a frying pan without oil or butter and fry the bacon over medium heat about 7 minutes until crispy.

4. Drain the bacon on paper towels and keep the fat.

5. Mash the potatoes with a potato masher until smooth.

6. Add the bacon fat and the juices and stir in the endive.

7. Season it with nutmeg, pepper, and salt if necessary.

8. Divide the mash among the plates and place the bacon on top.

If you prefer a vegetarian meal, you can also top the mash with vegan bacon or grated cheese.
